1 can of ray in pitau sauce
8 boiled potatoes
q.s. chopped coriander
1 sliced onion
q.s. olive oil
q.s. salt and pepper
q.s. chopped chives
Place the cooked potatoes in a pan, add a drizzle of olive oil, chopped coriander and season with salt and pepper. Mash the potatoes with a fork, involving the coriander, if necessary add more olive oil. Set aside.
In a skillet with olive oil, sauté the onions slowly until they start to gain a little colour and are caramelised. Set aside.
Open the can of rays, drain a little of the sauce and set aside.
On a plate, arrange the mashed potato, then the onions on top and finally the ray.
Drizzle with pitau sauce and sprinkle with chopped chives.
