1 jar of mackerel fillets in olive oil
1 tbsp. of butter
5 tbsp. of sliced black olives
q.s. salt and pepper
q.s. olive oil
Place the olives on an oven tray, bake at 200ºC for about 30min, or until the olive slices are dry. Place in a blender and grind the olives. Set aside.
Peel the carrots, cut them into pieces and put them in a pot. Cover them with water and let them boil until they are cooked. Drain the water and mash everything with a fork, add the butter and season with salt and pepper.
Open the jar of mackerel fillets, drain the olive oil. Remove the fillets and set aside.
To serve: Place the carrot puree on the base, place 2 mackerel fillets on top and sprinkle with the olive powder.
